Craftsman Lola’s is the latest in a line of UK food businesses offering up cheese recipes from scratch.
The business has produced a range of products for the home chef, such as cheese sauce, crackers and bread.
Its recipes have been adapted from other kitchens, and its cheese is made with locally sourced produce and dairy products.
The owner, Lola Williams, says she’s always been a cheese lover, but it wasn’t until she started her own restaurant in the early 2000s that she found herself inspired to start a business with the same passion.
“I started out doing my own cooking, and I just felt I had to give it a go,” she says.

For example, they have to make a variety of different cheeses because some cheeses can only be made from milk, while other cheeses need more water.
They also add new flavours and spices to the cheeses.
“For the cheese sauce I have to add a bit of lemon to it, which really works well for the flavour of the sauce.
And then there’s the cheese itself, which I try to create using the freshest, freshest ingredients I can find,” she explains.
The recipes vary from restaurant to restaurant, with a range being created on a weekly basis. “
But it’s a labour of love and a lot of the time it’s the ingredients that make it the most enjoyable, so I’m really happy with the result.”

“There’s a little bit of a learning curve for the cheese,” she adds.
“You need to know what the flavours are and the texture of the cheese is.

“A lot of cheese is quite thick, so it has to be softened a little to be able to be eaten in sandwiches and sandwiches with pasta,” she explained.
“Also, the cheese needs to be soft, so the cheese should be cooked very slowly so it doesn’t burn your mouth.
